Abstract
Kinetics is the study of rates. In the context of this chapter, we focus on the rates of processes by which folate undergoes absorption, distribution, and metabolism and through which it functions in one-carbon metabolism. Most research studies and clinical assessments in nutrition involve the use of biomarkers on which to draw inferences about nutritional status. Biomarkers are constituents of accessible body fluids, cells, or tissues that respond in a manner that refl ects a metabolic or physiological response and thus can be used as quantitative or diagnostic tools.
