Abstract
Sleep is a biological process that has a critical role in development, cognition and emotions. Sleep is influenced by the biological mechanisms involved in the physiological processing of caffeine found in widely used substances such as coffee. In this chapter, we review the biology behind sleep, the impact of caffeine and coffee on sleep, the physiological process of caffeine consumption and its connection to sleep, and the genetic factors in response to caffeine and coffee.
